74 75 A protein crystal mounted on the head of a pin, cooled by nitrogen vapour to stabilise it whilst measurements are taken on beamline I04. ​ (Image: Andrew Brookes) Using high resolution imaging techniques on an everyday snack we were able to examine the porosity (air bubbles) in carbon-based materials. By studying porosity within these types of materials, we can understand how it affects the material’s behaviour – in the case of food, the feel, taste and texture.
