34 35 A protein crystal mounted on the head of a pin, cooled by nitrogen vapour to stabilise it whilst measurements are taken on beamline I04. ​ (Image: Andrew Brookes) Using X-ray imaging, we were able to look inside an aerated chocolate bar to see the size, shape and position of the bubbles without unwrapping it first. This non-destructive technique enables us to examine the internal micro-structure of the material, which provides its unique qualities and taste experience.
